Ingredients:
5.......... boiled eggs
1......... Onion roughly chopped
1Tbsp...... ginger and garlic paste
2........... tomatoes medium size
1/2Tbsp.......Red chillie powder
1 tsp .........Turmeric powder
1/2Tbsp......Corriander powder
2 Tbsp........ grated coconut
5to 6no.......Curry leaves
Salt as per taste
Corriander leaves roughly chopped
Seasonings 2 cloves, 1inch cinnamon sticks
Method
1. Grind the coconut into fine paste.
2. In a wide mouth pan, heat oil and add the seasonings.
3. Add the onion and fry till they turn brown.
4. Add the ginger and garlic paste and saute them for a few minutes.
5. Add the coconut paste and mix well.
6. Add 2 tomatoes cut into small pieces,turmeric powder,red chillie powder and coriander powder saute till tomatoes turn soft.
7.Add the chopped corriander leaves ,2 cups water and saute.
8. Add salt and cook for a few more minutes till the oil floats .
9. Remove the shell and cut the egg into two pieces and add to the curry.
10. Spoon the gravy over the egg pieces and cook for 5 to 10 minutes.
Serve with Ghee rice,Plain rice,Fried rice or Chappathis..
