Pudina(Mint) rice




Aromatic basmati rice, potent fresh pudina leaves and coriander leaves- cooked together is a recipe that I have learnt from my sister who is in Sydney and very much illustrates the ingenuity and wisdom of home cook. Nutritious, wholesome and a one-pot meal, give it a try.


Ingredients:

Pudina leaves --------1 cup
Coriander leaves --------1 cup
Whole Jeera seeds --------1tsp
Fresh Ginger --------1 inch
Green chillies --------3 to 4 as per your taste
Onions --------1 Medium size( chop them length wise)
Tomato --------1 Medium size (chopped finely)
Cinnamon Sticks ---------1 inch
Cloves ---------2 pieces
Basmati rice --------2 cups cooked rice( rice should not be too soft)
Oil ---------2 Big table spoon
Salt ---------1/2 tbsp

Method:-

First make a paste of pudina leaves, coriander leaves, cumin seeds and fresh
ginger.

Put oil in a pan.Add Cinnamon and cloves together.Fry for 20 seconds.Then add
the chopped onions along with green chillies.Fry till the onions get cooked.
Then add the chopped tomatoes.Cook them till the tomato gets cooked and
the oil should be floating on the side of the pan.Finally add the green paste
( paste of pudina leaves, coriander leaves, cumin seeds and fresh ginger).
Fry the whole mixture for just few min's because if u cook the mixture for longer time
then pudina smells bitter and also it looses it color.It will turn into black color instead
of green color.So please take care of this point.Now it is time for us to add cooked
rice along with salt and stir-fry until heated through. Serve hot.
Good meal when combined yogurt/raita or just plain.
