Ingredients:
oil - 2 tbsp
Onion(finely chopped) - 1/2 kg(5 large)
Basmati rice - 3 cups
water - 3cups
Salt - as per taste
Baasa fillet fish - 3 pieces
Ginger finely chopped-1 inch
Turmeric powder - 1/4 tsp
green chillies - 2 no
Tomato(chopped) - 2 big(3 to 4 small) no
Garam masala powder - 1 tbsp (check my garam masala recipe)
Cumin powder-1tsp
Coriander powder-1tbsp
water-1/4cup water for sauce
Method:
Fry chopped onions in the pan on slow fire till onions turn dark brown.Make sure onions turn real dark brown that reflect on the colour of the pulvao when ready.
Make sure that you follow this procedure on slow fire from start till the end.
Once they turn brown add chopped ginger and green chillies.
Fry for 2 mins.
Then add chopped tomatoes with salt.Cook till the tomatoes become soft.
Add Coriander powder,turmeric powder and garam masala.
Stir it till all the ingredients mix properly.cook it for 5 more mins and add water for the sauce.
Add fish slices to the sauce and over the fish slices with sauce on the top.So that fish absorbs the flavours of the spices.cook for exact 5 mins and in between tip over the fish slices so that they cook properly on both the sides.
After the fish is cooked take out the fish slices with little sauce in it.
Now rice has to be cooked in the remaining sauce .For the above mentioned quantity of rice we need 6 cups water/sauce.Using a rice cup measure the number of cups of sauce you have got and add remaining cups with water.
Once rice is cooked before serving the rice place the fish slices with sauce on the top of the rice and warm it in microwave for 1min.You can even garnish with coriander.
